Globally, yogurt represents a commercial market surpassing $100 billion annually, led in per capita consumption by Turkey, where it serves as an essential staple in savory cooking, soups, and beverages. Proper handling techniques, such as tempering cold yogurt with hot liquid prior to simmering, prevent curdling and maintain a smooth emulsion in hot dishes.
