Padraic O'Kane has left his mark on Dublin city on numerous fronts - from his thriving restaurants Fire Steakhouse & Bar and Sole, to his success in bringing US collegiate football to the capital each year. Now the Longford-man is hoping to extend his reach with his latest acquisition: the premises of The Star Bar on Baggot Street. O'Kane spoke to our Head of News Peter O'Dwyer about how the hospitality industry has changed in the 20 years since Fire opened its doors, how the Aer Lingus College Football Classic came to be and his grand plans for his latest venture, Sally MacLennane's.
