IMPORTANT CELIAC DISEASE DISTINCTION
Ordinary wheat, rye, or barley sourdough should not be presumed safe for someone with celiac disease. Fermentation can modify components of the dough, but traditionally fermented bread may still contain clinically significant gluten.
