If you’ve ever found a “safe” way to eat and then felt trapped by it, you’re not alone. I’m Teresa Christensen, a functional medicine certified health coach, and I live with histamine intolerance too. Today I’m digging into the messy middle between wanting immediate symptom relief and still needing real nutrition, because a calm belly matters, but it can’t be the only measure of a healthy diet.
I share my own path from years of diet culture and the standard American diet to a short elimination approach that helped me feel better, and the uncomfortable realization that food wasn’t the whole story. We talk about how easily food lists get smaller, especially with histamine intolerance or mast cell activation syndrome, when you’re reacting to meals and trying to avoid migraines, flushing, itching, bloating, and digestive chaos. I also unpack “food as medicine” in a practical way: if you’re using a low histamine diet, low FODMAP diet, or elimination diet therapeutically, it should have a purpose, a way to evaluate results, and a plan for what happens next.
We look at why there’s no universally accepted low histamine list, how freshness and leftovers can change histamine load, and why portions, stress, sleep, hormones, illness, and medications can shift your tolerance week to week. I also share a simple framework inspired by the book How to Eat by Mark Bittman and David Katz: focus on whole or minimally processed foods you tolerate, get enough protein, include fiber and healthy fats, and stop letting diet names make the decisions for you.
