The Canadian professor who worked with the Innuit, mentioned in the talk is Dr Jay Wortman.
Dr. Jay Wortman's low-carb project is featured in the documentary "My Big Fat Diet" (2008). The film chronicles a study in which the Canadian Métis physician encouraged an entire First Nations community to abandon modern Western foods in favor of their traditional, low-carb, high-fat diet.
The results were transformative, showing remarkable improvements in weight, cholesterol, and blood sugar control without calorie counting or exercise. Dr. Wortman was inspired to conduct this study after successfully reversing his own Type 2 diabetes using the same low-carb lifestyle.
