We visited Belleville Brûlerie in their beautiful roasting space in Paris (it's funny that after re-location, it's not in the Belleville neighbourhood). They are one of the pioneers of speciality coffee in Paris and France. We interviewed a co-founder David Nigel Flynn and a head-roaster Mihaela Iordache.
