In May of this year, Ernie was a sushi chef who had just begun selling ramen kits to supplement his income due to his hours being cut by Covid-19. Fast forward 5 months later, he is in the final stages of opening Modesto's first craft ramen shop. In this episode, I wanted to catch up with Ernie and see how he's gone from kits to his own shop in such a short time. Covid has been incredibly difficult for so many in the restaurant industry. Ernie's story is one of the few bright spots of someone doing everything he can to make lemonades out of the lemons of 2020.
