On today’s episode I sit down with Alex Ryutaro Aramaki who runs a shop in Vancouver British Columbia called gyopara. Alex is actually a 3rd generation ramen chef, with his grandfather actually operating a ramen shop in post war Japan in the 1950s which I thought was quite rare.  After he helped open a few ramen franchises in the BC area, namely Jinya and Danbo, Alex brought back Gyopara which was his dad’s restaurant from the 90s with the intent of making food from scratch which if you listen to this podcast a lot you’ll know isn’t all that common with many ramen restaurants outside of Japan. In this episode we get into his family’s history with ramen, his work with opening up past ramen shops, maki and also his tips for making better ramen.
