In today's episode, we sit down with another Japanese ramen chef. He goes by the name Ramen Kaonashi on the internet, which roughly translates to "No face ramen” because he does not show his face publicly to keep his identity secret. He operates a ramen restaurant in Singapore and has been making ramen professionally for over a decade working in various ramen shops in Japan. He also has a YouTube channel by the same name where he shares his recipes for making real Japanese ramen in English.

In this episode, he shares his thoughts on operating a ramen shop outside of Japan, how to make good ramen and he share a phenomenal tip at the end of the interview which might be the best tips ever provided by a guest on the show for those of us who are trying to get better at making ramen at home.
